A new restaurant concept, Amalfi by Bobby Flay, officially opened to the public this week, bringing the fresh flavors of Southern Italy to Caesars Palace Las Vegas. Lucky journalists were treated to a pre-opening feast on June 17, with a special appearance by the celebrity chef himself, during Meeting Professionals International's World Education Congress.

The Amafi Coast, in particular "is my happiness," he said, and the inspiration behind his first Italian restaurant, with an emphasis on fresh seafood and handcrafted pastas.
We sampled much of the menu, from appetizers to pastas, fish and desserts. The review from this starstruck editor: sheer perfection in every bite. Personal favorites included the charred octopus, shellfish fritto misto, all the pastas, all the fish and all the desserts — with a special love for Bobby's Pistachio Sundae (pistachio gelato, dark chocolate sauce, amarena cherries from Sicily, vanilla cream and pistachio crunch). "That's what I eat at the end of every night," said Flay.
